Lovers of four-alarm fare can breathe a sigh of relief. The receptors that populate our tongues, palates, and even esophagi renew themselves every 10 to 14 days, so they can stand to be scorched. “Taste is the most resilient of our senses,” says Dr. Yanina Pepino, an assistant research professor at Washington University School of Medicine in St. Louis, “and no [two people] taste things the same way.” Do our appetites change as old taste buds slough off? Not necessarily, but so-called supertasters have more buds than most, making them intolerant of bitter bites like Brussels sprouts and dark greens. Yeah, that’s one way to get 
out of eating your veggies.
